My Best Banana Bread

 
My Best Banana Bread Recipe
This was from an old recipe that I received from a friend many years ago. Over the years I have been revising it and making it better.  This is the latest revision that not only made it healthier, but better than ever!

2 Tablespoons butter
1/2 cup brown sugar
2 eggs
4 Tablespoons buttermilk
1/2 cup applesauce
4 Crushed ripe bananas
1/2 cup whole wheat flour
1 1/2 cup all purpose flour
1 tsp baking soda
1/4 to 1/2 cup chopped walnuts or pecans (optional)
1 - 2 Tablespoons Raw sugar

Cream butter, and banana's with a spoon.  Add sugar, applesauce, and buttermilk.  Cream some more.  Add eggs, flour, soda & nuts if you like them and mix well.
Pour in a loaf pan that has been sprayed with non stick cooking spray. Take Raw sugar and sprinkle it over the top before baking.  This will make a nice crunchy top.
Bake in a 350 degree oven for one hour or until done.  (test with a knife - when inserted in middle and comes out almost clean it's done)
Removed from pan after 5 minutes out of the oven & let cool on thick towel or cooling rack.  Keep tightly wrapped in foil & refrigerate for freshness.  (Or you can put it back in the pan like I have and put the lid on)
